Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 1 c. raw or unsalted dry roasted peanuts*, 1 c. sugar, 1/2 c. white corn syrup, 1/8 tsp. salt and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In 1 1/2-quart casserole, stir together the first 4 ingredients.
Microwave for 4 minutes on High.
Stir well.
(*If using dry roasted peanuts wait until now to add them.)
Microwave 4 more minutes on High.
Add margarine and vanilla.
Cook 1 minute more on High.
Add baking soda, quickly stir until light and foamy. Immediately pour onto lightly buttered baking sheet.
Spread thin. When cool, break into pieces.
