Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 1 1/2 tsp. soda, 1 tsp. water, 1 tsp. vanilla, 1 1/2 c. sugar and 1 c. water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Butter 2 (15 1/2 x 12-inch) baking sheets.
Combine soda, water and vanilla; set aside.
Combine sugar, 1 cup water, corn syrup in large saucepan.
Cook over medium heat, stirring occasionally, to 240° by candy thermometer or when forms a soft ball when dropped into water.
Stir in peanuts and butter.
Cool until 300° (or when dropped in very cold water separates into threads which are hard and brittle).
Immediately remove from heat; stir in soda mixture thoroughly.
Pour half the candy onto warm baking sheet and quickly spread evenly about 1/4-inch thick. Cool.
Break candy into pieces.
Makes 2 pounds.
