Peanut Brittle

Cut pineapple in quarters, lengthwise, with crown (leaves) intact.
Remove fruit from shell by slicing 1/4 to 1/2-inch above shell, leaving about an inch of fruit at each end.
Fill shell with chicken, tuna or fruit salad.
With toothpicks, fasten 1/2-inch slices of pineapple to side of "boat" to make outrigger.
