Peanut Brittle is an easy dinner. Made with 2 c. white sugar, 1 c. karo white syrup, 1 c. boiling water, 1 lb. raw spanish peanuts and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil sugar, syrup and water until it strings (dip spoon in mixture, let drip, cook until it make a thread-like string).

Add peanuts and boil until peanuts turn in color (295Β° on candy thermometer).

Remove from heat and add soda, mixing well and quickly.

Mixture will be foamy.

Immediately spread as thin as possible onto large buttered cookie sheet or greased marble slab. After cooled, break up into pieces.

Store in covered container. Makes 36 servings.
