Peanut Brittle is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. clear karo syrup, 1 c. peanuts, pecans or cashews, 1 tsp. vanilla and 1 tsp. butter (butter flavored crisco), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Spray large microwave-safe bowl with Pam.

Spray pizza pan with Pam.

Mix sugar and Karo syrup in large bowl.

Heat in microwave for 3 to 5 minutes.

Stir halfway through time and when time is up, mix peanuts in with sugar and syrup.

Heat for 3 to 5 minutes. Stir halfway through time and when time is up, stir in vanilla and butter.

Heat for 1 minute.

Stir in soda well.

(This will cause it to "foam up.")

Pour into greased pizza pan.

Do not try and spread with spoon; tilt pan to spread.

Let cool for 30 minutes. Break into pieces.

For an extra treat, after breaking into pieces, dip in chocolate.
