Peanut Brittle is an easy dinner. Made with 2 c. sugar, 1/2 c. white corn syrup, 1/4 c. boiling water, 2 c. raw peanuts (do not remove red hulls) and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Put sugar, corn syrup and water in heavy pot and let come to a boil.

(Use medium heat throughout.)

Add peanuts when mixture starts to boil.

Cook until peanuts start popping and smell parched and sugar is medium brown in color, about 20 minutes. Remove from heat immediately and add baking soda.

Stir quickly. Do not beat.

Pour on a large buttered cookie sheet.

Let cool and break in small pieces.
