Peach Melba Pie
Peach Melba Pie is an moderately easy dinner. Made with 1 (no. 2 1/2 can) peaches, drained (about 3 1/2 c.), 1 1/4 c. sugar, 2 tbsp. flour, 2 tbsp. oleo and pinch of salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 425°.
Place peach slices in bottom of pie shell.
Cream together sugar, flour, oleo and salt.
Add beaten eggs and vanilla to creamed mixture and mix well.
Bake in 425° oven for 10 minutes, then reduce temperature to 350° and bake for 50 minutes. When knife is inserted in middle, it should come out clean.
