Pea Soup
Pea Soup is an moderately easy dinner. Made with 1/2 c. italian dressing, 2 c. cubed peeled potatoes, 2 (9 oz.) pkg. frozen peas and pearl onions, 2 (14 oz.) chicken broth and 1/2 c. sour cream, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Mix first 4 ingredients in large saucepan.
Bring to a boil over medium-high heat.
Reduce and simmer 15 minutes, until vegetables are tender.
Transfer in small batches to blender; blend until smooth.
Transfer back to pan and stir in sour cream.
Serve hot; garnish with mint, if desired.
