Pea Soup
Pea Soup is an moderately easy dinner. Made with 1 bag dried split peas, 1 lb. carrots, 4 medium potatoes, 3 stalks celery and 2 lb. ham (end), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Soak beans 4 hours or overnight.
Discard water.
Dice potatoes (skin on), celery, carrots and onion.
Add ham.
Put in 6-quart pot.
Cover ingredients with water.
Simmer 4 hour.
Remove ham. Remove fat and bone.
Cut ham into bite-size pieces.
Return to soup.
To thin, cook longer.
To thicken, add water.
Serve with toasted bagels.
