Pea Salad is an easy dinner. Made with 30 c. peas, drained, 3 3/4 c. diced celery, 2 1/2 doz. eggs, boiled and diced, 4 jars pimentos, drained and diced or 3 3/4 c. red bell peppers, diced and 2 medium size sweet onions, diced (vidalia), this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Place all ingredients into very large bowl and toss with a vinegar and oil based salad dressing.
Chill before serving. Make 75 servings (1/2-cup per serving).
