Pasta-Sausage Soup
Pasta-Sausage Soup is an impressive soup you can prepare in about 1 hour 22 minutes. Made with . hot or sweet italian sausage, medium onion, chopped, medium green pepper, cut into strips, garlic clove, minced and (28 oz.) can tomatoes, chopped and liquid reserved, this recipe delivers authentic, satisfying flavors. Remove casings from the sausages and cut into 1-inch pieces. In a Dutch oven, brown sausage over medium heat.
Remove sausage and drain all but 2 tablespoons of the drippings.
Saute onion, pepper and garlic until tender.
Add sausage and all remaining ingredients.
Simmer, uncovered, stirring occasionally, until pasta is tender, about 15 to 20 minutes.
Yield: quarts.
