Passover Brownies
Passover Brownies is an moderately easy dinner. Made with 1/2 c. margarine or butter, 1 1/2 c. sugar, 4 eggs, 1/2 c. potato starch and 1/2 c. matzo cake meal, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Grease 9 x 9-inch pan or mini cupcake tin (48 count).
Preheat oven to 350Β°.
In bowl, beat together butter and sugar.
Add eggs, 1 at a time.
Sift together potato starch and meal in separate bowl.
Make a paste of cocoa and water.
Add to wet ingredients. Mix well.
Add sifted ingredients.
Mix gently.
Pour into pan. Bake 25 to 30 minutes or if cupcakes, 12 minutes.
Yields 16 squares or 48 mini cupcakes.
