Parslied Potatoes
Parslied Potatoes is an moderately easy dinner. Made with 1 1/2 lb. red potatoes, scrubbed, 1 tbsp. oil, 1 onion, chopped, 1 clove garlic or 1/4 tsp. garlic powder and 1 c. chicken broth or stock, this recipe delivers authentic, satisfying flavors. Peel a strip of skin off of potatoes in the middle.
Place potatoes in cold water.
Heat large skillet over medium-high heat. Add oil.
SautΓ© onion and garlic for approximately 5 minutes. Add broth and 3/4 cup parsley; bring to a boil.
Place potatoes (one layer) in skillet.
Return to boil.
Reduce heat.
Simmer, covered, for 10 minutes or until potatoes are tender. Remove potatoes with slotted spoon to a serving bowl.
Add pepper to skillet mixture; stir.
Pour over potatoes.
Sprinkle with remaining parsley.
