Panocha
Panocha is an moderately easy dinner. Made with 1 1/2 c. light brown sugar, 1 c. sugar, few grains salt, 1 c. medium cream or evaporated milk and 1/2 tsp. maple flavoring, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine sugars and salt in saucepan; add 1/2 cream.
Cook, stirring until sugars dissolve.
Cover sugar mixture and cook 2 minutes.
Remove cover.
Stir constantly and add remaining cream gradually so sugar mixture never stops boiling.
Cook panocha syrup until soft ball forms in icy-cold to lukewarm water.
Add flavoring and beat until panocha is creamy.
Pour panocha into shallow 8-inch pan; mark into squares when almost cool.
