Pacific Lime Mold
Pacific Lime Mold is an moderately easy dinner. Made with 1 large box lime jello (6 oz.), 2 c. boiling water, juice of 18 oz. can pineapple, 2 c. creamy cottage cheese and 2 tsp. horseradish, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Dissolve jello in boiling water and add pineapple juice.
Chill until slighlty thickened, then beat until frothy.
Fold in pineapple.
Add cottage cheese, horseradish, whipped cream and nuts.
Chill in mold for at least two hours or overnight.
Unmold onto lettuce bed.
Fill center with pineapple chunks.
