Oysters Salisbury
Oysters Salisbury is an moderately easy dinner. Made with 2 doz. maryland oysters in shell, 2 tbsp. butter or margarine, 2 tbsp. flour, 2 c. milk and 2 tbsp. shredded swiss cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Open oysters, letting remain in deep half of shell.
Melt butter in 1-quart saucepan, blend in flour and slowly add milk. Simmer for 5 minutes, stirring occasionally.
Add the Swiss and Parmesan cheese and stir until cheese melts.
Stir in Worcestershire sauce, nutmeg, pepper and salt.
Cook spinach and squeeze out excess moisture.
Blend spinach into cheese sauce and let mixture cool.
Top each oyster with 1 tablespoon spinach mixture.
Sprinkle with Parmesan cheese and bake at 400Β° for 10 to 15 minutes.
Makes 2 dozen.
