Our Lefse
Our Lefse is an easy dinner. Made with 8 c. riced potatoes, 1 stick butter, 2 c. flour, 1 tsp. salt and 1 tsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook potatoes in slightly salted water.
Rice into large bowl and place butter into melt.
If potatoes are too cool to melt butter, place in microwave oven to melt.
Cool overnight.
Next day, add rest of ingredients.
Stir well.
Form into 2-inch balls. I roll on a canvas covered board with a regular rolling pin covered with a stockinette.
Constantly be working flour into board and rolling pin, so Lefse does not stick.
Transfer to griddle with Lefse paddle.
Bake until light brown spots form on one side.
Flip and continue baking.
Keep baked pieces covered so they do not dry out.
