Orzo
Orzo is an moderately easy dinner. Made with 2 tbsp. olive oil, 1 medium onion, diced, 2 yellow peppers, sliced in strips, 2 red peppers, sliced in strips and 1 tbsp. basil, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Saute onion, peppers and spices in olive oil approximately 5 to 10 minutes until tender.
Add shrimp and continue to cook 3 to 5 minutes, until shrimp are cooked.
Add 1 can Mexican tomatoes. Add Feta cheese; warm through.
In a separate pan, cook orzo pasta as directed; drain.
Serve shrimp mixture over orzo pasta.
