Orange Roughy
Orange Roughy is an moderately easy dinner. Made with 1/4 c. butter, 2 tbsp. each: lemon juice, chopped parsley and snipped chives, 1 tsp. dill weed, 2 dashes (1/16 tsp.) cayenne pepper and 1 lb. orange roughy, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Melt butter.
Stir in lemon juice, parsley, chives, dill and cayenne pepper.
Lay fish in single layer in 9-inch square pan. Pour batter mixture over fish.
Bake uncovered at 400Β° for 8 to 10 minutes.
Take out and keep warm.
Boil juices over high heat until about 1/4 cup is left.
Pour over fish.
