Orange Pralines
Orange Pralines is an moderately easy dinner. Made with 2 c. sugar, 3/4 c. half and half cream, 1/4 tsp. salt, 2 1/2 tbsp. light corn syrup and juice and grated rind of 1 orange, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Place sugar, cream, salt and corn syrup in a saucepan and stir constantly until mixture boils.
Add orange juice slowly and continue cooking until mixture reaches soft ball stage (240° on candy thermometer.)
Add orange rind and cook until it reaches 240° again.
Add butter, vanilla and food coloring.
Beat until mixture holds its shape.
Add pecans.
Drop on wax paper. Store in tin or plastic containers.
Makes about 1 1/4 pounds of candy.
