Orange Barley
Orange Barley is an moderately easy dinner. Made with 7 1/2 c. barley, 5 chopped onions, 2 1/2 tsp. oregano, 3 bay leaves and 20 tbsp. margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown barley lightly in margarine.
Add onions and garlic. Stir over moderate heat for 5 minutes.
Add spices and mushrooms. Stir to mix.
Add stock, juice and salt.
Bring to a boil.
Cover tightly and bake in a preheated 350Β° oven for 1 1/2 hours or until liquid is absorbed and barely tender.
Add liquid if necessary. Barley should be firm and chewy.
Serves 30.
