Opossum Pie
Opossum Pie is an moderately easy dinner. Made with 30 ritz crackers, 1 c. pecans, 1 c. sugar, 3 egg whites and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Break or chip Ritz crackers (not too fine).
Do pecans the same.
Beat egg whites until stiff.
Add sugar, pecans and vanilla.
Bake in greased pie pan at 250Β° for 25 minutes.
Let cool.
Cover with Cool Whip and coconut.
Keep in refrigerator.
