Onion Shortbread
Onion Shortbread is an moderately easy dinner. Made with 2 large onions, sliced thin, 1/2 c. (1 stick) butter or margarine, 1 (8 oz.) container sour cream, 1/2 tsp. dried dill weed and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion in butter.
Stir in sour cream, dill weed, salt and half the Cheddar cheese (1/2 cup).
In a separate bowl combine corn, milk, dry muffin mix, egg and hot pepper sauce.
Put corn mixture in a buttered 9 x 13-inch dish.
Spread onion mixture over top.
Top with remaining Cheddar cheese.
Bake in a 425Β° oven for 30 to 40 minutes.
Serves 8 to 10.
