One-Pot Chicken
One-Pot Chicken is an moderately easy dinner. Made with 2 tsp. olive oil, 1 onion, thinly sliced, 2 stalks celery, cut into 1-inch slices, 1 (3 1/2 lb.) chicken, cut in 8 pieces and 1/2 c. dry vermouth, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In large skillet, heat oil and saute onion and celery 3 to 4 minutes.
Add the chicken.
Increase heat and toss with vegetables 1 minute longer.
Add vermouth and allow to boil 1 minute.
Add broth, garlic, thyme, salt and pepper.
Bring to boil; cover. Reduce heat to low and cook 10 minutes.
Add potatoes.
Stir and return to boil.
Cover, reduce heat and simmer another 30 to 35 minutes.
