Omelet Deluxe
Omelet Deluxe is an moderately easy dinner. Made with 2 tbsp. cooking oil, 1 c. sliced fresh mushrooms, 6 eggs, slightly beaten, 1/3 c. milk and 1 tsp. chopped green onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In cooking oil, saute mushrooms gently over low heat.
Combine eggs, milk, onion and seasonings.
Add to the mushrooms and cook slowly.
As egg mixture sets, lift gently with spatula to allow uncooked portion to flow underneath.
Fold in half.
Garnish with shredded cheese and parsley.
Makes 3 to 4 servings.
