Combine pudding mix and 2 tablespoons sugar in saucepan. Blend in 2 cups milk.
Cook and stir over medium heat until mixture comes to a full boil.
Remove from heat; stir in butter and vanilla.
Pour remaining milk over bread cubes in a bowl to moisten, then stir into pudding mixture.
Add 1 cup sugar and pineapple; mix well.
Pour in a greased baking dish.
Bake at 350Β° for about 30 minutes or bake until firm and lightly browned. Serve warm or chilled.
