Okra Medley
Okra Medley is an moderately easy dinner. Made with 1 1/2 c. okra, sliced 3/4-inch thick, 1 1/2 c. squash, diced, 1 c. carrots, sliced thinly, 1/2 c. chopped onion and 3 tbsp. margarine, melted, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Cook okra, squash and carrots with salt in water, enough to cover slightly, covered, for 7 minutes.
Add onion and pepper; cook for 3 or 4 minutes, until all are lightly crisp.
Remove from heat; drain in colander.
Pour in dish and toss with melted margarine.
