Oatmeal Coconut Cookies
Oatmeal Coconut Cookies is an impressive dinner. Made with 1 1/4 c. butter, 3/4 c. brown sugar, 1/2 c. white sugar, 1 tsp. vanilla and 1 1/2 c. plain flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oven to 375Β°.
Beat together butter and sugars until light and fluffy.
Beat in egg and vanilla.
Combine flour, baking soda, salt and spices; add to butter mixture, mixing well.
Stir in oats, coconut and chips.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake 8 to 9 minutes for chewy cookies or 10 to 11 minutes for crisp cookies.
Cool on wire rack.
Makes 4 1/2 dozen.
