Oatmeal Cake
Oatmeal Cake is an moderately easy dinner. Made with 1 c. quick oats, soaked 20 minutes in 1 1/4 c. boiling water or 1 1/2 c. cooked oatmeal, 1 c. white sugar, 1 c. brown sugar, 1/2 c. shortening and 1 1/3 c. sifted flour, this recipe delivers authentic, satisfying flavors. Cream sugar and shortening.
Add eggs and vanilla; beat well. Sift flour, soda, cinnamon and salt together; sift into butter. Beat.
Add oats; mix well.
Add nuts last and stir in.
Bake 35 to 40 minutes at 350Β° in a 9 x 16-inch greased pan.
