Oatmeal Cake
Oatmeal Cake is an moderately easy dinner. Made with 1 c. quick oats, 1 1/4 c. boiling water, 1/2 c. shortening, 1 c. light brown sugar and 2 eggs, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Soak oats in boiling water and let cool.
Cream shortening, brown sugar and white sugar.
Add eggs and vanilla to creamed mixture.
Sift flour, soda, cinnamon, salt and nutmeg together. Alternate the adding of oats mixture, shortening and sugar.
Baked in an 11 x 13-inch greased pan at 350Β° for 25 minutes.
