Nut Cake
Nut Cake is an moderately easy dinner. Made with 1 lb. butter, 2 c. sugar, 1/4 tsp. salt, 8 oz. (1/2 lb.) candied pineapple and 1/2 lb. candied cherries, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream butter and sugar.
Add beaten eggs.
Add 3 cups flour, baking powder and salt.
Add vanilla.
Mix remaining cup flour with fruit and nuts.
Stir into batter.
Pour in greased and paper-lined tube pan.
Bake at 250Β° for 3 hours.
Let cool in pan.
My family prefers this to regular fruitcake.
