No Fat Muffins is an moderately easy dinner. Made with 1 1/4 c. flour, 1/4 c. cornmeal or ralstons, 1/2 c. sugar, 1/4 c. dry milk and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 400°.
Spray muffin tin(s) with butter spray. In large bowl, combine dry ingredients.
"Sift" with a fork. Gently stir in yogurt and water.
(Add fruit, if desired.)
Blend just until moistened.
Bake at 400° for 18 minutes or until well browned.
Yields 12 regular muffins.
