Never Fail Rice Pudding
Never Fail Rice Pudding is an moderately easy dinner. Made with 1 qt. milk, 3 eggs, 6 tbsp. rice, 3/4 c. sugar and 3 tbsp. margarine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cook rice, milk and margarine in top of double boiler, stirring occasionally for 1 hour. Stir eggs, sugar, extract and a dash of salt in buttered 2-quart casserole.
Pour hot mixture into egg mixture and stir well.
Place casserole in pan of hot water in oven.
Stir coconut in after 15 minutes at 325Β°.
Pudding is done when knife comes out clean.
