Combine flour and salt in mixing bowl.
Add shortening.
With cool fingertips, work into flour to make fine crumbs.
Combine egg, vinegar and water; stir to mix, then add to crumbs and stir with a fork to mix.
Divide dough into 4 parts (makes enough for 2 double crust pies).
Roll out each portion on lightly floured board.
