Needhams(Candy)
Needhams(Candy) is an moderately easy dinner. Made with 3/4 c. mashed potatoes, 1/2 tsp. salt, 2 (1 lb.) boxes confectioners sugar, 1 stick oleo and 1 (8 oz.) pkg. shredded coconut, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Prepare and cook potatoes to make 3/4 cup.
Drain.
Add salt and mash.
Melt oleo; add potatoes, coconut and sugar and mix well. Turn into a buttered jelly roll pan.
Spread evenly.
Refrigerate and allow to harden.
Cut into squares and dip in coating.
