Cook apples and run through colander to make 6 cups of applesauce.
Place in crock-pot with remaining ingredients on high for 1/2 hour.
Turn down on low and cook all night with lid on. Next morning, remove lid and cook down to desired thickness.
While hot, pour in jars and cover with hot lids.
