Mix first 3 ingredients in large saucepan. Cook to 260Β° (hard-boil) and cool. In mixer bowl, beat 3 egg whites until stiff. Slowly add hot syrup; add vanilla. Add pecans. Beat until dull. Spread on wax paper.
Cool and cut.
