Mustard Beets
Mustard Beets is an moderately easy dinner. Made with 3/4 c. sugar, 1/2 c. vinegar (white), 2 cans beets, sliced and drained, 1/2 tsp. instant onion, minced and 3 tbsp. mustard, prepared, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Bring to a boil all ingredients, except beets, until sugar is dissolved (use wire whisk to mix in mustard).
Add beets.
(I sometimes put in slices of sweet onion too.)
Simmer, uncovered, 5 minutes.
Cool and put in jars and refrigerate.
