Mushroom Medley
Mushroom Medley is an moderately easy dinner you can prepare in about 2 hours 10 minutes. Made with c. frozen peas, large onion, c. medium size fresh button mushrooms, . margarine and salt to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Prepare each vegetable separately to obtain right texture.
In saucepan, cook peas until nearly done.
Cover and set aside.
Slice onion thickly.
Cut each slice into eight pie-shaped pieces.
Cook in water until done, but still firm.
Add margarine; cover and set aside.
Wash mushrooms.
Stand on end and cut into quarters.
Boil hard until done.
Strain mushrooms and add to onions.
Add peas and enough juice that mixture can be simmered.
Add salt.
Simmer and taste.
Serve hot.
