Muffin Cheesecakes
Muffin Cheesecakes is an easy dinner. Made with 2 (8 oz.) pkg. cream cheese, 1 c. sugar, 1 tsp. vanilla, 2 eggs and vanilla wafer cookies, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cream together the cream cheese, sugar and vanilla and set aside.
Place 1 vanilla wafer cookie in the bottom of a paper baking cup.
(The foil ones look very nice.)
Place 1 1/2 tablespoons or so of the cream cheese mixture in each cup.
Bake at 350Β° for 20 minutes.
Remove from oven and cool.
When cool, top with any flavor pie filling mixture and whipped topping. Sprinkle chopped nuts on top, if desired.
Makes 18 to 24.
