Mozzarella Rice Balls
Mozzarella Rice Balls is an moderately easy dinner. Made with 2 c. cooked rice, cold, 1/2 c. grated parmesan, 1/4 c. finely chopped, roasted red peppers, 1 egg, lightly beaten and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. In a medium bowl, combine rice, Parmesan cheese, roasted peppers, egg, salt and pepper.
Shape rice balls using 1/3 cup rice mixture for each ball. Gently insert cheese cube into center of each ball.
Re-shape rice mixture around cheese cube to cover completely.
Coat balls with bread crumbs.
