Mother's Gingerbread
Mother'S Gingerbread is an moderately easy dinner. Made with 1/2 c. butter or shortening, 1/2 c. white sugar, 1 egg, well beaten, 2 1/2 c. sifted flour and 1 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream together butter and sugar.
Add beaten egg. Measure and sift dry ingredients.
Combine molasses and water.
Add dry ingredients to the creamed mixture alternately with the liquid mixture, a small amount at a time.
Beat after each addition until smooth.
Pour batter into a 9 x 11 x 2-inch pan that has been lined with waxed paper.
Bake for 45 minutes at 350Β°.
