Mother's Fruit Bars
Mother'S Fruit Bars is an moderately easy dinner. Made with 1 stick butter, melted, 2 eggs, beaten, 1 c. plain flour, 1 1/2 c. crystallized mixed fruit, finely chopped and 1 1/2 c. light brown sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Grease and flour baking pans.
Spread 2 cups pecans in bottom of 2 (9 x 13-inch) baking pans.
Make a batter by mixing butter, sugar, eggs, vanilla and flour.
Pour this carefully over nuts. Do not mix nuts into batter.
Sprinkle 1/2 cup nuts and fruit over batter.
Bake 1 hour at 300Β°.
Cut while hot into small squares. Cool in pans.
Remove and store in airtight container.
They freeze well.
