Morning Glory Muffins
Morning Glory Muffins is an impressive dinner. Made with 2 c. flour, 1 1/4 c. sugar, 2 tsp. baking soda, 2 tsp. cinnamon and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sift together flour, sugar and baking powder.
Add salt and cinnamon.
Stir in carrots, raisins, nuts, coconut and apples.
In other bowl, whisk eggs, oil and vanilla.
Add to flour mixture and stir just until combined.
Spoon into well-greased and floured muffin tins, filling to top.
Bake at 350Β° for 30 to 35 minutes or until done.
Let cool in tins for 5 minutes, then put on rack to cool.
Makes 30.
