Mom's Light Fruitcake
Mom'S Light Fruitcake is an moderately easy dinner. Made with 1 lb. margarine, 2 c. sugar, 6 eggs, 1 1/2 c. flour and 2 oz. real lemon extract, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Cream together margarine and sugar until fluffy, adding eggs, flour and lemon extract.
Fold in flour coated fruits and nuts. Pour into greased and floured pans.
Put in oven at 250Β° for 1 hour.
Put pan of water in oven also.
Cool in pans, then remove and wrap in hot damp towel (can soak with rum).
After towel has cooled, remove, wrap and put in fridge.
