Molded Fruit Salad
Molded Fruit Salad is an moderately easy dinner. Made with 1 c. plain yogurt, 1/4 c. lemon juice, 1/4 tsp. salt, 8 oz. can unsweetened pineapple tidbits and 1 tbsp. unflavored gelatin, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine yogurt with lemon juice and salt; blend well.
Drain pineapple, reserving juice.
Soften gelatin in the pineapple juice and heat until dissolved.
Stir into yogurt mixture.
Add berries. Beat with mixer.
Chill until mixture begins to thicken.
Stir in pineapple and peaches.
Pour into one quart mold and chill until set.
Unmold on lettuce leaves.
