Molded Cranberry Waldorf
Molded Cranberry Waldorf is an moderately easy dinner. Made with 2 c. cranberry juice cocktail, divided, 1 (3 oz.) pkg. lemon flavored gelatin, 1/4 tsp. salt, 1 c. chopped, unpeeled apple and 1/2 c. chopped celery, this recipe delivers authentic, satisfying flavors. Pour 1 cup cranberry juice in a saucepan and bring to a boil; add gelatin, stirring until dissolved.
Stir in remaining cranberry juice and salt.
Chill until slightly thickened.
Fold apple, celery and nuts into gelatin mixture.
Pour into a 4 cup mold or 6 individual molds.
Chill until firm.
Unmold and top with mayonnaise, if desired.
