Mock Wild Rice is an moderately easy dinner. Made with 1 1/2 c. raw rice, 1/2 c. finely diced celery, 1/4 c. each: chopped onion and chopped green pepper, 1/4 c. butter and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine rice, celery, onion, green pepper and butter in a skillet.

Cook over medium heat, stirring frequently until rice is lightly browned, then stir in salt, monosodium glutamate, pepper and chicken bouillon.

Heat to a boil, then reduce heat to very low and cover tightly.

Cook 30 minutes or until rice is tender and liquid is absorbed, stirring occasionally.

Just before serving, stir in 1/2 cup chopped filberts which have been sauteed in a little butter.

Serves 6 to 8.
