Mock Eggnog
Mock Eggnog is an moderately easy dinner. Made with 2 qt. cold milk, 1 (3.4 oz.) pkg. instant french vanilla or vanilla pudding mix, 1/4 c. sugar, 1 tsp. ground nutmeg and 1 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a mixing bowl, beat milk and pudding mix on low speed for 2 minutes.
Beat in the sugar, nutmeg, vanilla and a pinch of salt if desired.
In another bowl, beat cream until thickened, about 3 minutes.
Stir into pudding mixture.
Refrigerate until serving. Sprinkle with additional nutmeg if desired.
Yield: about 2 1/2 quarts.
