Mock Apple Pie
Mock Apple Pie is an moderately easy dinner. Made with 2 pie shell crusts, 1 stack ritz crackers or saltines, 2 c. water, 2 c. sugar and 2 tsp. cream of tartar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Break crackers coarsely into pie shell.
Combine water, sugar and cream of tartar in pan.
Boil for 15 minutes gently.
Add lemon juice to mixture and cool.
Pour syrup over crackers.
Dot with butter and sprinkle with cinnamon.
Cover with top crust.
Cut slits in top crust and bake at 400° to 425° for 20 to 30 minutes. Serve warm or cold.
